My kitchen is registered as a Class 2 commercial premises with the Wyndham council, and all food is prepared following strict food safety guidelines.
My standard cake tiers are a minimum of 4 inches tall, are torted to have four layers of cake and three layers of filling inside, and are presented on a fondant covered board finished with a ribbon.
I make as much as possible from scratch – all my cakes, ganache, fondant and buttercream fillings. I make delicious Swiss meringue buttercream and French meringue buttercream to fill my cakes.
